1. I don't see the point of LVM, unless you're thinking you'll need to add more disks later and want them to come in seamlessly.

Which is not a totally inconsequential decision, but it's also one I find pretty rare.

2. Yes, that's pretty much how it works: Each partition is a separate bootable partition, both load the kernel and the rest from the RAID, and then the RAID keeps them both identical.

It's apparently possible to have the initrd image load the RAID *before* starting Grub, but I have absolutely no idea how that works.
