How much of that post-burst head motion came from momentum transfer from the water splashing away (action->reaction) and how much because our intrepid volunteer flinches when wet?

I'd also venture to state that the sudden movement of his head is due to the release of energy from the latex shredding. I don't think the video speeds up, I think the latex releasing speeds the water up. I've seen a few water-balloon-popping videos that show how fast things happen when the balloon gives way and it's always an amazing sight.
