Would probably depend a little on the relative humidity of the area... If it were wetter, It probably would have molded, rather than dessicated.

Then again, given the bareness of the skull and foot bones, I can't help but think the mice got some revenge in, as well...

So help me, I look at that and what *immediately* comes to mind is the description in I Am Legend of what some of the vampires looked like when Neville killed them, and how they decomposed into long piles of black and white grains, like salt and pepper.
