Well, I have to be honest: I can't speak for all bear hunters everywhere. In our family, and in the families of bear hunters I know, we all eat the meat. You do really have to know how to cook it.
Bear hunting is dangerous and expensive: I can't imagine doing this if you weren't going to eat the meat. But there may be hunters who do not do things the way we do.
