What's the thing they're sitting on? They look like some sort of shrimp, but I can't identify that at all. Some sort of coral? A starfish?

Looks like a starfish from the shape and texture, but that makes those shrimp even smaller than I thought.

So I don't know!

Those are harlequin shrimp and yes that is a blue starfish. Harlequin shrimp are specialists: their diet consists mainly of the tube feet of starfish, although they will also eat sea urchins. http://www.aquahobby.com/marine/e_helegans.php I believe it is in that link that it is claimed that a fair sized starfish will feed a harlequin shrimp for two weeks.
