I was reading about insalata Caprese and drooling this afternoon. No convenient way to get good fresh mozzarella on short notice, but it was still inspiring.
So!
First, Homemade Bruschetta!
Ingredients:
French bread
2 large tomatoes, diced
2 cloves garlic, smashed
1/2 sweet onion, finely chopped
1 tbsp fresh chopped oregano
2 tsp fresh chopped basil
2 tsp fresh chopped parsley
2 tbsp extra-virgin olive oil.
Feta cheese
Instructions:
1. Preheat oven to 190 (375 F)
2. Mix oil, garlic, oregano, parsley, basil, and onion in a bowl. Add the diced tomatoes and toss lightly - you want it well mixed, but you don't want to crush the tomatoes.
3. Slice the bread thinly and arrange it in a single layer on a foil-lined baking sheet.
4. Spread the tomato mixture over the bread. Add a generous sprinkling of crumbled feta cheese. Drizzle with a little more olive oil.
5. Toss in the oven for ~10min. The cheese should just be starting to brown.
Side note: This recipe makes a TON. And also French bread is pretty big. Which means that a small container of the mix, a small container of feta, and some bread is going to be Fresh Bruschetta In The Toaster Oven In The Office For Lunch Tomorrow. Which will be awesome!
Second, Steamed Artichokes With Lemon Butter!
Ingredients:
Artichokes
Butter
Lemon
Instructions:
1. Steam artichokes.
2. Melt butter, add lemon juice.
3. Don't eat the spikes.
Interestingly, this entire meal is vegetarian, and, with the exception of the butter and the occasional free-floating cat hair (bloody cats) vegan!
