Fabernak, in Toronto, states that they are proud to pay their staff a living wage, and therefore tipping is not required. If you do leave a tip, the staff will actually drop it in a donation jar for the local community centre.
The staff consists of people facing barriers to employment. For many, this is not only the first steady job they've had, it is the highest paying job they've had in their life.
It is interesting reading that from a country where the minimum wage is decent and tipping is not a norm. Because tipping isn't expected there isn't even a service charge usually because everyone incorporates into price of meals. Any sales tax is included in final quoted price so that doesn't have to be calculated at end either. (We have a 10% rate across country so easy to do)
Minimum wage in Canada is... better than in the States (~$10 hour, with four provinces allowing for a 10-15% lower minimum wage for groups expected to get tipped; I leave it to you to imagine how I reacted to hearing that it was ~$7.25 in the States, and tipped employees could be paid as little as $2.13 by the employers as long as tips covered the rest). :s It is still low, dammit.
Mind, here there isn't even a service charge usually because everyone tips, although restaurants that can expect to deal with large groups of students occasionally have a note like "we reserve the right to charge a service fee of 10% for groups of over 6/10/12/whatever" on the menu.

The way it worked for me at one job was that they paid you $3 less an hour or whatever, and then just automatically added enough reported tips onto your paycheck to make it look like you'd earned just enough tips to keep them out of trouble. We always earned more tips than that, so it was nice not having to report it, but it kinda makes it clear what's going on.
