There are changes from the books, largely having to do with conservation of characters and events - things that involved character+random now usually still happen, but involve character+character. In other case, two characters are combined into one, or a character is removed and split up.
For a past-seasons non-spoiler example, Edric Storm (Robert's bastard, Stannis' ward) simply doesn't exist in the TV show. Instead, Gendry is repurposed to do all of the stuff Edric Storm did. The stuff still HAPPENS, but now it's with an existing character instead of a new one. Also, because *we the viewer* would have to be idiots to not recognise Barristan Selmy, he doesn't even try to pretend he isn't who he is, and Strong Belwas doesn't exist at all. Instead, Daario Naharis and Grey Worm do all the stuff Strong Belwas was required for.
I assume that's why there hasn't been a Coldhands. Because whether he's played by Joseph Mawle, or not played by Joseph Mawle, that wouldn't just be a show spoiler but really a big books spoiler too.
