Or perhaps it's about drivers, which would also explain why they don't support Linux any more either - this is cutting-edge technology and they don't have the OS support at the moment.
After all, you can certainly build a Linux box with the same graphics card as one of their supported Windows boxes, and I don't remember any talk about the Mac Pro using fancy space-saving techniques like using laptop technology that would prevent you swapping out the graphics card.
From what I understand, it's a driver/software issue for Linux, for macs it's both software and hardware.
As you said, linux can use identical hardware to windows. However, it's also using an inferior driver set because both nvidia and AMD put their open-source drivers somewhere on their priority list behind cleaning out their in-laws' attic. Even if that wasn't a problem, you have the issue of a wider spectrum of distros and software configurations to support. Linux support is still on the table for 'the future.'
As nsanity_au said, the cards for the trashcan aren't great for gaming. Respectable for video rendering work, but both hardware-wise and software-wise they're not what Occulus needs. Even if it had better cards, the issue of driver/software support would be there-- Apple gives the entirety of their desktop/laptop driver base the same respect that AMD/Nvidia give their open-source base.
