I seem to recall one of Tony Hillerman's non-fiction books relaying the happy discovery by one prisoner that one of the walls of the Taos jail cell he was in was soft adobe and can be tunnelled through with a fork or a spoon. Unfortunately the other side was a jewelry store or somesuch and all their external walls were impenetrable.
Things are clearly different from the days of Alcatraz. It helps if the prison is exposed to salty sea air, which breaks down concrete, thereby making it easier to tunnel through.
